These bacon wrapped stuffed dates are smoky, sweet and salty. They’re the perfect small bites packed with large amounts of flavor. They’re best when served warm!
Preheat the oven to 375 degrees. Line a ½ sheet pan with nonstick aluminum foil or parchment paper.
Slice the dates, lengthwise and remove the pits.
Combine the goat cheese, lemon zest, honey, salt & pepper in a small bowl. Fill a zip top bag with the goat cheese mixture and pipe 1/2 – 1 teaspoon of it into the dates.
Cut the bacon into thirds and wrap it around each of the dates, trying to make sure the seam side is on the bottom of the stuffed date.
Arrange the wrapped and filled dates on the prepared pan, seam side down. Bake for about 30 minutes. Make sure to check them every 10 minutes to avoid burning them. I have been there & it is not pretty…or tasty. Rotate the pan as needed, for evenly cooked, crispy bacon.
Remove the bacon wrapped dates from the oven and cool slightly before serving. They will be molten hot make sure to protect your mouths!!
Remember to adjust your expectations on time according to how many you bake at once. We overcrowded our pan the first year we made these and they took WAY longer than we expected.
