Roasted Cinnamon Vanilla Almonds

If you enjoy seeing your family smile or just want to make yourself a tasty snack, then make these roasted cinnamon almonds today. 

Ingredients

  • 1 egg white, lightly beaten
  • ½ cup granulated sugar
  • ¼ cup brown sugar, packed
  • 2 teaspoons vanilla
  • ½ teaspoon salt
  • 1½ teaspoons ground cinnamon
  • 4 cups raw almonds

Instructions

Preheat your oven to 250 degrees.  Line a half sheet pan with nonstick aluminum foil and spray it with nonstick cooking spray.  Set aside until ready to use.

In a large mixing bowl, whisk the egg until it’s frothy.  Add in the sugars & vanilla and whisk it together to combine. 

Once the wet mixture is thoroughly combined, add in the salt and cinnamon.  Whisk the mixture to combine and then gently fold in the almonds.

Spread the cinnamon coated almonds on the prepared pan and place in the oven.  Bake at 250 degrees for about 1 hour and 15 minutes. Stir the almonds every 20 minutes to allow for even cooking and to try to prevent them from burning.

When the cinnamon almonds are done cooking, remove them from the oven and allow them to cool completely before handling them.  They will harden as they cool.  Break them a part, if needed, and enjoy!
